Corn & Cheese Fritters
Ingredients (for six fritters):
~ 65g/ 1/2 cup wholewheat flour (atta)
~ 65g/ 1/2 cup plain flour (maida)
~ 1/4 tsp baking powder
~ 1 1/2 cups fresh corn kernels, boiled in salted water and drained
~ 1/2 cup grated cheese
~ 1/4 tsp salt
~ 2 eggs, lightly beaten
~ 1 tbsp butter
Method:
~ Sift both flours with baking powder into a bowl.
~ Mix in corn, cheese and salt.
~ Add eggs and mix well.
~ Divide batter into six equal portions.
~ Melt butter in a frying pan on moderate heat.
~ Drop spoonfuls of batter into pan leaving 1" between each fritter and fry till golden.
~ Flip over and fry the other side.
~ Serve hot.
